Lightened Rotisserie Chicken Salad…

This is so simple and can be eaten over mixed greens, with crackers, raw vegetables, in a pita, or as a wrap.

1 rotisserie chicken with all the meat pulled from it.

1 stem of celery- finely diced

1/4 cup of plain Greek yogurt

Start with 2 tablespoons of high quality Mayo- you made need more but a try and get away with as little as possible

1 teaspoon of Dijon mustard

S&P

Mix all together- depending on how large your bird is you made need to add more yogurt or Mayo. Use just enough to get to the consistency you desire.

I love mine in a wheat wrap or with carrot sticks.

I add lettuce, tomato, and pickles to my wrap.
