Semi homemade grilled bruschetta chicken.

We are currently living in a 2 sport world with basketball and soccer overlapping. We have a practice or game every day of the week except Sunday and Wednesday. This is forcing me to either prep food or come up with 15 minute meals.

I got a lot of help from the supermarket on this one but it still turned out light and fresh.

Marinate 3 chicken breast overnight in balsamic Vinaigrette. Cut breast in half and grill. Top with store bought bruschetta, chopped basil and shaved Parmesan. Drizzle with balsamic glaze.
