Thai Chicken Pizza

Pizza is a great way to elevate your vegetable game. This is another one from my girl Rachael Ray. I’ve made a few adjustments to make it easier.

This pizza always makes me think of Seinfeld because Kramer wanted to open a make your own pizza place and have cucumbers as a topping. I relate a lot of things from my life to Seinfeld. This combo may sound weird but it is so yummy.

Ingredients-

2 chicken breast marinated in a store bought Thai peanut sauce

2 Naan flat breads

4 tablespoons of duck, plum, or pad Thai sauce (I prefer plum)

1/2 a red pepper- diced

1 generous cup of shredded Monterey Jack cheese

1/2 of a cucumber sliced thin

1/2 cup of white wine vinegar

1/4 cup of honey

Scallions- diced

Cilantro- chopped

1/4 cup of dry roasted peanuts- smashed

Preheat oven to 425 and place a pizza stone inside

Grill chicken, let cool and dice

Mix white wine vinegar with honey and pour over cucumbers.

Place plum sauce on naan and sprinkle with the diced red peppers. Place on pizza stone and cook for 5 minutes. Remove add cheese, chicken, and scallions. Cook for 10-12 more minutes.

Meanwhile put peanuts in a bag and smash.

Remove pizzas from oven and top with cucumbers, cilantro, and crushed peanuts.

I used an orange pepper.
It’s key to slice the cucumbers thin and to marinate for at least 15 minutes.
I top mine with a store bought Asian salad but my husband prefers his on the side. This is totally optional. Enjoy!

Almond Butter

This is it. Super easy.

14 oz bag of unsalted almonds

1 teaspoon kosher salt

2 tablespoons of avocado oil

Pour almonds into a food processor and add salt. Purée while adding oil through the lid. It may seem a little runny but it will thicken in the refrigerator.

Store in the refrigerator for up to two weeks. Enjoy!

Wax Beans with Sliced Potatoes and Bacon

This might be my favorite side dish. The salty savory combo is perfection. And is two sides in one. I serve with steak.

I love serving our whole meal on a big serving tray. I also slice the meat so it’s just easier for everyone to dig into.

3 slices of bacon

6 new potatoes sliced thin

I’m not sure why it took so long to get me one of these. First time with a mandolin, freakin love it.

1 bag of prepped and trimmed wax beans

2 tablespoons of capers, drained

1 teaspoon of evoo

2 tablespoons of red wine vinegar, I used a purple basil vinegar

S&P

Preheat oven to 450.

Cook bacon for 6-8 minutes until brown, I check after 5. Place on a paper towel and crumble.

Toss potatoes in bacon grease and S&P. Cook for 10-12 minutes then remove and flip. Meanwhile toss beans with evoo, S&P and capers. Place beans on top and cook 10 more minutes. May need to slightly adjust time depending on how thick your potatoes are and if you like them well done like me.

Remove and toss with bacon and vinegar.

Serve with meat of your choice. I prefer steak!

Detox Ginger Lemonade

  • 4 inch piece of ginger peeled and sliced thinly
  • 3/4 cup honey
  • 2 cups boiling water
  • Juice of 4-6 lemons
  • Ice and water

Boil 2 cups of water with sliced ginger and honey. Boil for 3 minutes then let it steep off the heat for 10. Squeeze lemon juice into the bottom of a pitcher then add 4 cups of filtered water. Once honey water has cooled add to lemon water and serve over ice.

Chicken Burrito in a Jar….

I’ve shared my love for salads in a jar before. They are perfect for lunch at work, an on the go meal, or a picnic.

The order in which you layer is so important and they last up to three days in the frig. Be sure to let everything cool before placing in jar. I always leave space at the top of my jar. Pour into a big bowl and enjoy. If in a pinch, shake up jar and eat straight from it.

First layer- Dressing- mix sour cream and salsa to the color you desire

Second layer- rinsed black beans and corn, add desired amount

Third layer- mix cooked rice with juice of a lime and cilantro- I used two cups of minute white rice.

Forth layer- chicken cooked with taco seasoning. Follow directions on packet.

Fifth layer- grilled peppers/onions and diced tomatoes

Sixth layer-chopped romaine lettuce

Seventh layer- shredded cheddar or cheese of your choice

Eighth layer- diced avocado
